Real Graham Crackers

Ingredients:
1 1/3 cups whole wheat graham flour or coarse whole wheat flour
1/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1/4 cup milk
6 T honey
1 1/2 T molasses
1/2 tsp cinnamon
extra whole wheat flour for adjustments

Process:
1. Combine all of the ingredients to form a ball of dough (except extra flour).

2. Knead for 3 minutes on lightly floured work surface. Adjust so it's not sticky or crumbly.

3. Cover the dough and let it rest for 20 minutes.  (For tastier crackers, let the dough sit out on the counter overnight.) Preheat the oven to 350 F.

4. Prepare the baking sheets (see below).  Mist the work surface with oil (or oil it with a paper towel).  Roll dough out to 1/8 thick--super thin!  If it springs back while rolling, let it rest for a little.

5. Cut the shapes you like.  A pizza cutter works great.

6. Put craker shape on a baking sheet that has parchment paper or a silicon mat. Don't let the crackers touch.  We didn't have these things, so we used aluminum foil.

7. Bake for 12 minutes, then rotate, then bake for 10 - 13 minutes longer. They should be a nice, brown color.

8.  Cool on the pan.  You can also brush them with butter while they're hot and sprinkle them with cinnamon and sugar.

        We made this recipe because we didn't want to buy any crackers.  They were all not good.  For example, they all had high fructose corn syrup or hydrogenated vegetable oil. 

        Below you have the ingredients for some Benton's Honey Graham Crackers.  It says that it's made with real honey; and it says it has 5 grams whole grain per serving. Do you think that's better than ours? (Funny English!)

Enriched flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), sugar, graham flour (enriched flour, whole grain wheat flour), vegetable oil (contains one or more of the following: canola oil, corn oil, palm oil, soybean oil), high fructose corn syrup :(, honey, salt, leavening (sodium bicarbonate, monocalcium phosphate), artificial flavor, soy lechithin (emulsifier), sodium sulfite.

  1. Hi Lane, wow, homemade graham crackers! We cannot buy graham crackers here in China. I miss them because I like them with a little butter on them or I like to make S'mores. You have inspired me to look to see if I can find graham flour here in China...then I could try your recipe! I will let you know if I find some. I love reading your blog, keep up the good work!   2. oh boy!! I want to share some of those with you. I would put peanut butter and banana slices on mine. I definitely think your ingredients are far superior. I am glad you are learning about nutrition and about cooking. I really enjoy reading your blog.
